For the latest LGM podcast, I interview J.L. Anderson of Mount Royal University about his recent book Capitalist Pigs: Pigs, Pork, and Power in America. This is a great overview of the role of pigs in American history, including a good discussion at the end of how the taste of pork has changed and the revival of pork as an increasingly high-end food today. But it’s not all just porky goodness. We also discuss the role of pigs as a colonizing element for the European invasion of America, how pigs were used to control but also feed slaves, the role of pigs in 19th century cities, and other fun stuff.
