Tortellini Soup with Sausage and Broccolini: Recipe Review

One reason I’ve become a big fan of Food Network Magazine recipes in the past few years is because they usually don’t have a long ingredient list and use unfussy techniques, but still manage to deliver big flavor. This soup is no exception–it was easy to make and tasted amazing.

You may have made a soup similar to this before. The ingredients are hardly exotic. But one of the secret to FNM‘s success is their use of punchy ingredients. In this one it’s the broccolini, which tastes so sweet and vegetal, and rosemary, which adds such a kick of woodsy freshness. It reminds me a bit of the Eggplant Marinara Sandwiches I reviewed awhile back, where an unexpected ingredient (mint) added so much flavor and dimension.

I highly recommend this dish and am looking forward to enjoying it for lunch today! Leftover soup is THE BEST.
