Real Pickles
Before we move on to what is clearly a subject that evokes a surprising amount of passion–pickles, I want to share a recipe with all you celery-libelers out there. It’s an old Moosewood recipe I’ve ever so slightly tweaked and it’s just a very simple salad of mushrooms and celery that really lets the flavor of celery shine.
- A few stalks of tender, inner celery stalks, thinly sliced
- One 8 oz. box of mushrooms, thinly sliced
- 1/3-1/2 cup grated Parmesan cheese
- Juice of one large juicy lemon
- olive oil to taste
- pinch of sugar
- plenty of salt and pepper
- In a big bowl, whisk together the lemon juice, oil, sugar and salt and pepper.
- Stir in the celery, mushrooms and Parm
- Take back all those mean things you said about celery, you jerks!
