Recipe Review: Chicken Primavera Spaghetti Squash Boats
I don’t often have easy access to a lot of nice produce but for whatever reason my local grocer always has pretty good-looking spaghetti squash. I never buy it. But I kept seeing spaghetti squash “boat” recipes on Delish and I finally relented and tried one of them out.
Chicken Primavera Spaghetti Squash Boats is a perfectly nice recipe, however I’m not sure the end result is worth the effort. There are a lot of steps to making this dish and while none of them are at all difficult, it’s still a respectable amount of work for a dish that’s only good, as opposed to great.
First you have to halve (a whole THING unto itself) and roast the squash. Then you have to prep and sauté all the veggies, shred pre-cooked chicken, loosen up the cooked squash strands, pop everything in the boats, top with cheese and bake some more.
The recipe is obviously trying to evoke summer with its fresh peak-season veggies and the distinctly floral addition of lemon zest, and while it is rather summery it is still seriously missing some zing. If you have any ideas for how you’d tweak this to add zing, I’d love to read them in the comments.
All in all, this is a nice, summery dish that could easily be vegetarian by simply omitting the chicken and Parm. And I very much enjoyed the contrast of the sweet squash with the savory sauté, but, again, I’m not sure the recipe is worth the fuss.
