Make this now: and all year ’round
Another winner winner chicken dinner from Ali Slagle! I made this thinking it would be a quick, easy way to use up some small tomatoes; I wasn’t expecting it to be revelatory…but I should never doubt Ali. It’s just crazy good.

All you do is put some chicken thighs, cherry or grape tomatoes, honey, soy, ginger, sesame oil and gochujang in the slow cooker, and let it hang out for a few hours (I recommend Low setting, and less than four). When it’s done, what you’re greeted with is a silky, sweet, sour sauce and fork tender chicken, to serve over rice or noodles or…whatever. I recommend topping with sliced green onions, because it just perks everything up at the end.
Not bad for a 5 minute time investment.
Notes: Cilantro would be a great topper, too. If you want a vegetarian option, I would just…leave out the chicken, then spoon the sauce over rice, noodles, or baked or roasted sweet potatoes.
